Ingredients

  • Lasagna noodles - 4 sheets
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Ricotta cheese - 250 grams
  • Mozzarella cheese - 200 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Marinara sauce - 300 ml
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced zucchini, bell pepper, and sliced mushrooms to the skillet, cooking for about 5-7 minutes until softened.
  4. Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt, black pepper, and dried oregano. Remove from heat.
  5. In a mixing bowl, combine ricotta cheese with a pinch of salt and pepper. Mix well.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Place 2 sheets of lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetables, and a third of the mozzarella cheese.
  8. Repeat the layering process with another 2 sheets of noodles, the remaining ricotta mixture, the remaining vegetables, and half of the remaining marinara sauce.
  9. Top with the final 2 sheets of noodles, the rest of the marinara sauce, and the remaining mozzarella and grated Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  11. Let the lasagna cool for 5 minutes before slicing. Garnish with fresh basil before serving.
