Ingredients
- Lasagna noodles - 4 sheets
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Mushrooms - 100 grams, sliced
- Spinach - 100 grams, fresh
- Ricotta cheese - 250 grams
- Mozzarella cheese - 200 grams, shredded
- Parmesan cheese - 50 grams, grated
- Marinara sauce - 300 ml
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Preheat the oven to 190°C (375°F).
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the diced zucchini, bell pepper, and sliced mushrooms to the skillet, cooking for about 5-7 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes. Season with salt, black pepper, and dried oregano. Remove from heat.
- In a mixing bowl, combine ricotta cheese with a pinch of salt and pepper. Mix well.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Place 2 sheets of lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the sautéed vegetables, and a third of the mozzarella cheese.
- Repeat the layering process with another 2 sheets of noodles, the remaining ricotta mixture, the remaining vegetables, and half of the remaining marinara sauce.
- Top with the final 2 sheets of noodles, the rest of the marinara sauce, and the remaining mozzarella and grated Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
- Let the lasagna cool for 5 minutes before slicing. Garnish with fresh basil before serving.
