  • Soy sauce (low sodium) - 60 ml
  • Honey - 30 grams
  • Rice vinegar - 15 ml
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Water - 60 ml
  • Green onions (sliced) - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Cooked rice - 200 grams (for serving)

Steps

  1. Start by marinating the chicken thighs in a mixture of soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil for at least 15 minutes.
  2. In a small bowl, mix cornstarch with 60 ml of water to create a slurry.
  3. Heat a skillet over medium heat and add the marinated chicken thighs, reserving the marinade.
  4. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through.
  5. Once the chicken is cooked, remove it from the skillet and set it aside.
  6. In the same skillet, add the reserved marinade and bring it to a simmer.
  7. Stir in the cornstarch slurry and cook for an additional 2-3 minutes until the sauce thickens.
  8. Return the chicken to the skillet, coating it well with the thickened teriyaki sauce.
  9. Serve the teriyaki chicken over cooked rice, garnished with sliced green onions and sesame seeds.
