Ingredients

  • Chicken thighs (bone-in, skinless) - 500 grams
  • Greek yogurt - 150 grams
  • Tandoori masala - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic, minced - 3 cloves
  • Ginger, grated - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro, chopped - for garnish

Steps

  1. In a large mixing bowl, combine Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, cumin powder, coriander powder, salt, black pepper, and vegetable oil. Mix well to form a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours for deeper flavor.
  3. Preheat your oven to 200°C (400°F). Line a baking tray with aluminum foil and place a wire rack on top.
  4. Arrange the marinated chicken thighs on the wire rack, allowing excess marinade to drip off.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has a nice char. You can broil for an additional 5 minutes for extra crispiness if desired.
  6. Remove from the oven and let it rest for 5 minutes. Garnish with fresh cilantro before serving.
