Ingredients
- Chicken thighs (bone-in, skinless) - 500 grams
- Greek yogurt - 150 grams
- Tandoori masala - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic, minced - 3 cloves
- Ginger, grated - 1 tablespoon
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable oil - 2 tablespoons
- Fresh cilantro, chopped - for garnish
Steps
- In a large mixing bowl, combine Greek yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, cumin powder, coriander powder, salt, black pepper, and vegetable oil. Mix well to form a marinade.
- Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, preferably 2-4 hours for deeper flavor.
- Preheat your oven to 200°C (400°F). Line a baking tray with aluminum foil and place a wire rack on top.
- Arrange the marinated chicken thighs on the wire rack, allowing excess marinade to drip off.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and has a nice char. You can broil for an additional 5 minutes for extra crispiness if desired.
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh cilantro before serving.
