- 2 medium zucchini
- 250 grams ground halal beef
- 1 small onion - finely chopped

- 1 medium tomato - diced
- 1/2 cup cooked quinoa
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley - chopped
- 1/4 cup shredded mozzarella cheese
Steps
- Preheat the oven to 180°C (350°F).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create space for the filling.
- In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
- Add the ground beef to the skillet, cooking until browned. Stir in the diced tomato, cooked quinoa, cumin, paprika, salt, and black pepper, mixing well.
- Remove the skillet from heat and stir in the chopped parsley.
- Fill each zucchini half with the beef mixture, pressing down lightly to pack it in.
- Sprinkle shredded mozzarella cheese evenly over the stuffed zucchinis.
- Place the stuffed zucchinis in a baking dish and cover with foil. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Remove from the oven and let cool for a few minutes before serving.
