Ingredients

  • 2 medium zucchini
  • 250 grams ground halal beef
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 medium tomato - diced
  • 1/2 cup cooked quinoa
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley - chopped
  • 1/4 cup shredded mozzarella cheese

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create space for the filling.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
  4. Add the ground beef to the skillet, cooking until browned. Stir in the diced tomato, cooked quinoa, cumin, paprika, salt, and black pepper, mixing well.
  5. Remove the skillet from heat and stir in the chopped parsley.
  6. Fill each zucchini half with the beef mixture, pressing down lightly to pack it in.
  7. Sprinkle shredded mozzarella cheese evenly over the stuffed zucchinis.
  8. Place the stuffed zucchinis in a baking dish and cover with foil. Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Remove from the oven and let cool for a few minutes before serving.
