Ingredients

  • 2 large bell peppers - any color
  • 200 grams ground lamb
  • 100 grams cooked rice
  • 1 small onion - finely chopped
  • 2 cloves garlic - minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt - to taste
  • Black pepper - to taste
  • 2 tablespoons olive oil
  • 100 grams diced tomatoes (canned or fresh)
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  4. Add the ground lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, cumin, coriander, paprika, salt, and black pepper. Mix well and cook for another 3-4 minutes until heated through.
  6. Stuff the mixture into the hollowed bell peppers, pressing down gently to pack it in.
  7. Place the stuffed peppers upright in a baking dish. If desired, drizzle a little olive oil on top of each pepper.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes to slightly char the tops.
  10. Garnish with fresh parsley before serving.
