Ingredients
- 2 large bell peppers - any color
- 200 grams ground lamb
- 100 grams cooked rice
- 1 small onion - finely chopped
- 2 cloves garlic - minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt - to taste
- Black pepper - to taste
- 2 tablespoons olive oil
- 100 grams diced tomatoes (canned or fresh)
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the ground lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the cooked rice, diced tomatoes, cumin, coriander, paprika, salt, and black pepper. Mix well and cook for another 3-4 minutes until heated through.
- Stuff the mixture into the hollowed bell peppers, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. If desired, drizzle a little olive oil on top of each pepper.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to slightly char the tops.
- Garnish with fresh parsley before serving.
