  • Fresh spinach - 150 grams (washed and chopped)
  • Ricotta cheese - 100 grams
  • Parmesan cheese - 50 grams (grated)
  • Nutmeg - 1/4 teaspoon
  • Black pepper - to taste
  • Butter - 30 grams
  • Garlic - 1 clove (minced)
  • Fresh basil - for garnish

Steps

  1. In a large bowl, mix the flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gradually incorporate the flour into the eggs until a dough forms.
  2. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  3. While the dough is resting, prepare the filling. In a pan, sauté the chopped spinach with a little olive oil until wilted. Remove from heat and let cool.
  4. In a bowl, combine the cooled spinach, ricotta cheese, grated Parmesan, nutmeg, and black pepper. Mix well until smooth.

  6. Place a teaspoon of filling in the center of half the rectangles. Moisten the edges with water, then fold over and press to seal, ensuring no air pockets remain.
  7. Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes until they float to the top. Remove with a slotted spoon and set aside.
  8. In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Add the cooked ravioli and toss gently to coat in the butter.
