- All-purpose flour - 200 grams
- Butter (unsalted) - 100 grams, chilled and cubed
- Cold water - 60 ml
- Fresh spinach - 150 grams, washed and chopped
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Egg - 1 large, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the garlic and cook for another minute.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the sautéed spinach mixture, crumbled feta, shredded mozzarella, beaten egg, salt, black pepper, and nutmeg. Mix until well combined.
- Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the dish and trim any excess.
- Fill the pie with the spinach and cheese mixture, spreading it evenly.
- Roll out any remaining dough to create a top crust, or cut into strips for a lattice design. Place over the filling, sealing the edges.
- Brush the top with a little beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the pie is golden brown.
