Ingredients

  • All-purpose flour - 200 grams
  • Butter (unsalted) - 100 grams, chilled and cubed
  • Cold water - 60 ml
  • Fresh spinach - 150 grams, washed and chopped
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Egg - 1 large, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the garlic and cook for another minute.
  5. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  6. In a bowl, combine the sautéed spinach mixture, crumbled feta, shredded mozzarella, beaten egg, salt, black pepper, and nutmeg. Mix until well combined.
  7. Roll out the chilled dough on a floured surface to fit a 9-inch pie dish. Transfer the dough to the dish and trim any excess.
  8. Fill the pie with the spinach and cheese mixture, spreading it evenly.
  9. Roll out any remaining dough to create a top crust, or cut into strips for a lattice design. Place over the filling, sealing the edges.
  10. Brush the top with a little beaten egg for a golden finish.
  11. Bake in the preheated oven for 25-30 minutes or until the pie is golden brown.
  12. Let cool for a few minutes before slicing and serving.
