Ingredients

  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lettuce - 1 cup, shredded
  • Tomato - 1 medium, diced
  • Avocado - 1 medium, sliced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Sour cream - 4 tablespoons

Steps

  1. In a bowl, combine the shrimp with garlic powder, cumin, paprika, salt, and black pepper. Toss to coat the shrimp evenly and let marinate for 10 minutes.
  2. While the shrimp is marinating, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the corn tortillas one at a time, cooking each for about 1-2 minutes on each side until golden and crispy. Remove and set aside.
  3. In the same skillet, add the marinated shrimp and cook for 3-4 minutes, or until they turn pink and are cooked through. Remove from heat.
  4. To assemble, place a crispy tortilla on a plate, layer with shredded lettuce, then top with shrimp, diced tomato, avocado slices, and chopped cilantro.
  5. Drizzle lime juice over the top and add a dollop of sour cream before serving.
