Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Linguine or spaghetti - 150 grams
  • Olive oil - 2 tablespoons
  • Unsalted butter - 2 tablespoons
  • Garlic (minced) - 3 cloves
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon

Steps

  1. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat until melted.
  3. Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant but not browned.
  4. Add the shrimp to the skillet, season with salt, black pepper, and red pepper flakes. Cook for about 3-4 minutes, until the shrimp turn pink and opaque.
  5. Stir in the lemon juice, lemon zest, and the remaining tablespoon of butter, allowing it to melt and create a sauce.
  6. Add the cooked pasta and reserved pasta water to the skillet, tossing everything together to combine and coat the pasta in the sauce.
  7. Remove from heat, stir in the chopped parsley, and adjust seasoning if necessary.
  8. Serve immediately, garnished with extra parsley if desired.
