Ingredients
- Zucchini - 1 medium (about 200g)
- Eggplant - 1 medium (about 250g)
- Red bell pepper - 1 medium (about 150g)
- Yellow bell pepper - 1 medium (about 150g)
- Tomatoes - 2 medium (about 300g)
- Onion - 1 small (about 100g)
- Garlic - 3 cloves
- Olive oil - 2 tablespoons (30ml)
- Fresh basil - 10g (about 1/4 cup, chopped)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dried thyme - 1/2 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- Preheat your oven to 190°C (375°F).
- Wash and chop the zucchini, eggplant, red and yellow bell peppers into small, bite-sized pieces.
- Dice the onion and mince the garlic.
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the chopped zucchini, eggplant, and bell peppers. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
- Chop the tomatoes and add them to the skillet along with salt, black pepper, thyme, and oregano. Mix well to combine.
- Cover the skillet and let it simmer for about 10 minutes, allowing the flavors to meld together.
- Remove the lid and transfer the skillet to the preheated oven. Bake for 15-20 minutes until the vegetables are tender and slightly caramelized.
- Once done, remove from the oven and stir in the fresh basil. Serve warm.
