Ingredients

  • Zucchini - 1 medium (about 200g)
  • Eggplant - 1 medium (about 250g)
  • Red bell pepper - 1 medium (about 150g)
  • Yellow bell pepper - 1 medium (about 150g)
  • Tomatoes - 2 medium (about 300g)
  • Onion - 1 small (about 100g)
  • Garlic - 3 cloves
  • Olive oil - 2 tablespoons (30ml)
  • Fresh basil - 10g (about 1/4 cup, chopped)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Wash and chop the zucchini, eggplant, red and yellow bell peppers into small, bite-sized pieces.
  3. Dice the onion and mince the garlic.
  4. In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic and cook for an additional 1 minute until fragrant.
  6. Stir in the chopped zucchini, eggplant, and bell peppers. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  7. Chop the tomatoes and add them to the skillet along with salt, black pepper, thyme, and oregano. Mix well to combine.
  8. Cover the skillet and let it simmer for about 10 minutes, allowing the flavors to meld together.
  9. Remove the lid and transfer the skillet to the preheated oven. Bake for 15-20 minutes until the vegetables are tender and slightly caramelized.
  10. Once done, remove from the oven and stir in the fresh basil. Serve warm.
