Ingredients

  • Potatoes - 400 grams
  • Heavy cream - 200 ml
  • Cheddar cheese - 100 grams, grated
  • Parmesan cheese - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Butter - 20 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Thyme - 1 teaspoon, dried
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel the potatoes and slice them thinly (about 2-3 mm thick) using a mandoline or a sharp knife.
  3. In a saucepan, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream, then add salt, black pepper, thyme, and nutmeg. Stir well and bring to a gentle simmer for 2-3 minutes.
  5. In a greased baking dish, layer half of the sliced potatoes at the bottom. Pour half of the cream mixture over the potatoes.
  6. Sprinkle half of the grated cheddar and parmesan cheese over the cream mixture.
  7. Add the remaining potato slices on top, followed by the remaining cream mixture and the rest of the cheese.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the potatoes are tender.
  10. Let it cool for a few minutes before serving.
