Ingredients

  • Large eggs - 4
  • Fresh spinach - 100 grams, chopped
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.
  2. Heat olive oil in a non-stick skillet over medium heat. Add the chopped onion and sauté until translucent, about 2-3 minutes.
  3. Add the diced green bell pepper and tomato to the skillet and cook for another 2 minutes until slightly softened.
  4. Stir in the chopped spinach and cook until wilted, about 1-2 minutes.
  5. Pour the whisked eggs over the sautéed vegetables in the skillet. Let it cook undisturbed for about 2-3 minutes, or until the edges begin to set.
  6. If using, sprinkle feta cheese over one half of the omelette. Carefully fold the omelette in half and cook for another 1-2 minutes until the eggs are fully cooked through.
  7. Slide the omelette onto a plate and garnish with fresh parsley before serving.
