  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Parmesan cheese (grated) - 50 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil and butter over medium heat.
  3. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and sliced mushrooms; cook until the mushrooms are softened, about 5-6 minutes.
  5. Add the Arborio rice to the skillet, stirring to coat the rice with the oil and butter mixture for about 2 minutes.

  7. Continue adding the broth, one ladle at a time, stirring frequently, until the rice is creamy and al dente, about 18-20 minutes.
  8. Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese, chopped parsley, salt, and pepper to taste.
  9. Serve immediately, garnished with additional parsley if desired.
