- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon
- Parmesan cheese (grated) - 50 grams
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and sliced mushrooms; cook until the mushrooms are softened, about 5-6 minutes.
- Add the Arborio rice to the skillet, stirring to coat the rice with the oil and butter mixture for about 2 minutes.
- Pour in a ladleful of the warm vegetable broth and stir until absorbed.
- Continue adding the broth, one ladle at a time, stirring frequently, until the rice is creamy and al dente, about 18-20 minutes.
- Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese, chopped parsley, salt, and pepper to taste.
- Serve immediately, garnished with additional parsley if desired.
