  • Green lentils - 1 cup
  • Olive oil - 2 tablespoons

  • Carrot, diced - 1 medium
  • Celery, diced - 1 stalk
  • Garlic, minced - 2 cloves
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Vegetable broth - 4 cups
  • Tomato, diced - 1 medium
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley, chopped - for garnish

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the cumin, coriander, and turmeric, cooking for an additional minute to toast the spices.
  5. Add the rinsed lentils, diced tomato, bay leaf, and vegetable broth to the pot. Bring to a boil.
  6. Reduce heat to low and simmer uncovered for about 25-30 minutes, or until the lentils are tender.
  7. Season with salt, black pepper, and lemon juice to taste. Remove the bay leaf before serving.
  8. Ladle the soup into bowls and garnish with fresh parsley.
