- Celery, diced - 1 stalk
- Garlic, minced - 2 cloves
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Vegetable broth - 4 cups
- Tomato, diced - 1 medium
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley, chopped - for garnish
Steps
- Rinse the green lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the cumin, coriander, and turmeric, cooking for an additional minute to toast the spices.
- Add the rinsed lentils, diced tomato, bay leaf, and vegetable broth to the pot. Bring to a boil.
- Reduce heat to low and simmer uncovered for about 25-30 minutes, or until the lentils are tender.
- Season with salt, black pepper, and lemon juice to taste. Remove the bay leaf before serving.
- Ladle the soup into bowls and garnish with fresh parsley.
