Ingredients
- Chicken thighs (bone-in, skin-on) - 500 grams
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, grated
- Scallions - 2, chopped
- Fresh thyme - 1 tablespoon, chopped
- Allspice - 1 teaspoon
- Cayenne pepper - 1 teaspoon
- Paprika - 1 teaspoon
- Brown sugar - 1 tablespoon
- Soy sauce (Halal) - 2 tablespoons
- Lime juice - 2 tablespoons
- Vegetable oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a mixing bowl, combine minced garlic, grated ginger, chopped scallions, chopped thyme, allspice, cayenne pepper, paprika, brown sugar, soy sauce, lime juice, vegetable oil, salt, and black pepper to create the jerk marinade.
- Place the chicken thighs in a resealable plastic bag or a shallow dish, and pour the jerk marinade over the chicken, ensuring it is evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
- Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off.
- Place the chicken thighs skin-side down on the grill. Cook for 6-7 minutes, then flip and cook for an additional 6-7 minutes, or until the internal temperature reaches 75°C (165°F).
- Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
