  • Boneless chicken breast - 150 grams, diced
  • Halal turkey sausage - 100 grams, sliced
  • Long-grain rice - 100 grams
  • Diced tomatoes - 200 grams, canned
  • Onion - 1 small, chopped
  • Bell pepper - 1 small, diced
  • Garlic - 2 cloves, minced
  • Chicken broth - 250 ml
  • Olive oil - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Oregano - 1/2 teaspoon
  • Thyme - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2, chopped (for garnish)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the diced chicken breast and sliced turkey sausage, cooking until the chicken is browned on all sides, about 5-7 minutes.
  5. Add the rice, diced tomatoes (with their juices), chicken broth, paprika, cayenne pepper, oregano, thyme, salt, and black pepper. Stir well to combine all the ingredients.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 minutes, allowing the rice to absorb some of the liquid.
  7. Transfer the skillet to the preheated oven and bake uncovered for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
