- Chicken breast - 300 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Basmati rice - 1 cup (200 grams)
- Water - 2 cups (500 ml)
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1/2 small, thinly sliced
- Fresh parsley - 1/4 cup, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
Steps
- In a bowl, mix olive oil, garlic powder, onion powder, paprika, cumin, salt, and black pepper to create a marinade.
- Cut the chicken breast into thin strips and coat them with the marinade. Let it marinate for at least 10 minutes.
- While the chicken is marinating, rinse the basmati rice under cold water until the water runs clear.
- In a saucepan, bring 2 cups of water to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and the water is absorbed.
- In a skillet over medium-high heat, cook the marinated chicken for about 6-8 minutes, stirring occasionally, until fully cooked and browned.
- In a small bowl, mix tahini, lemon juice, minced garlic, and a tablespoon of water to create a creamy sauce. Adjust the consistency with more water if necessary.
- To assemble the bowls, divide the cooked rice between two bowls, top with the grilled chicken, diced cucumber, diced tomato, sliced red onion, and chopped parsley.
- Drizzle the tahini sauce over the top of each bowl and serve immediately.
