Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Basmati rice - 1 cup (200 grams)
  • Water - 2 cups (500 ml)
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/2 small, thinly sliced
  • Fresh parsley - 1/4 cup, chopped
  • Tahini - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced

Steps

  1. In a bowl, mix olive oil, garlic powder, onion powder, paprika, cumin, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into thin strips and coat them with the marinade. Let it marinate for at least 10 minutes.
  3. While the chicken is marinating, rinse the basmati rice under cold water until the water runs clear.
  4. In a saucepan, bring 2 cups of water to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15 minutes or until the rice is tender and the water is absorbed.
  5. In a skillet over medium-high heat, cook the marinated chicken for about 6-8 minutes, stirring occasionally, until fully cooked and browned.
  6. In a small bowl, mix tahini, lemon juice, minced garlic, and a tablespoon of water to create a creamy sauce. Adjust the consistency with more water if necessary.
  7. To assemble the bowls, divide the cooked rice between two bowls, top with the grilled chicken, diced cucumber, diced tomato, sliced red onion, and chopped parsley.
  8. Drizzle the tahini sauce over the top of each bowl and serve immediately.
