- Olive oil - 2 tablespoons
- All-purpose flour - 2 tablespoons
- Onion - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Halal chicken breast - 200 grams, diced
- Andouille sausage (halal) - 100 grams, sliced
- Chicken broth - 500 ml
- Canned diced tomatoes - 200 grams
- Okra - 100 grams, sliced
- Bay leaves - 2
- Cajun seasoning - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the flour and stir continuously for about 10 minutes until it turns a deep brown color to make a roux.
- Add the diced onion, green bell pepper, celery, and garlic to the roux. Cook for about 5 minutes until the vegetables are softened.
- Stir in the diced halal chicken and sliced andouille sausage. Cook for another 5 minutes until the chicken is no longer pink.
- Pour in the chicken broth and add the canned diced tomatoes, sliced okra, bay leaves, Cajun seasoning, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat and let it simmer for 20 minutes, stirring occasionally. Remove the bay leaves before serving.
- Garnish with fresh parsley and serve hot over rice or with crusty bread.
