Ingredients

  • Olive oil - 2 tablespoons
  • All-purpose flour - 2 tablespoons
  • Onion - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Halal chicken breast - 200 grams, diced
  • Andouille sausage (halal) - 100 grams, sliced
  • Chicken broth - 500 ml
  • Canned diced tomatoes - 200 grams
  • Okra - 100 grams, sliced
  • Bay leaves - 2
  • Cajun seasoning - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the flour and stir continuously for about 10 minutes until it turns a deep brown color to make a roux.
  2. Add the diced onion, green bell pepper, celery, and garlic to the roux. Cook for about 5 minutes until the vegetables are softened.
  3. Stir in the diced halal chicken and sliced andouille sausage. Cook for another 5 minutes until the chicken is no longer pink.
  4. Pour in the chicken broth and add the canned diced tomatoes, sliced okra, bay leaves, Cajun seasoning, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat and let it simmer for 20 minutes, stirring occasionally. Remove the bay leaves before serving.
  6. Garnish with fresh parsley and serve hot over rice or with crusty bread.
