Ingredients

  • White fish fillets (cod or haddock) - 300 grams
  • All-purpose flour - 100 grams
  • Cornstarch - 50 grams
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cold sparkling water - 200 ml
  • Vegetable oil (for frying) - 500 ml
  • Potatoes - 2 large (about 400 grams)
  • Malt vinegar (for serving) - to taste
  • Tartar sauce (for serving) - to taste

Steps

  1. Peel the potatoes and cut them into thick chips (about 1 cm wide). Soak them in cold water for 30 minutes to remove excess starch.
  2. In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until you achieve a smooth batter.
  3. Heat the vegetable oil in a deep pot or fryer to 180°C (350°F).
  4. Drain the soaked chips and pat them dry with a kitchen towel. Fry the chips in the hot oil for about 5-7 minutes until they are golden but not fully cooked. Remove and drain on paper towels.
  5. Dredge the fish fillets in a little flour to help the batter stick, then dip them into the batter, allowing any excess to drip off.
  6. Carefully place the battered fish into the hot oil and fry for about 5-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.
  7. Return the chips to the hot oil and fry for an additional 3-4 minutes until crispy and golden. Drain again.
  8. Serve the fish and chips hot, drizzled with malt vinegar and accompanied by tartar sauce.
