- White fish fillets (cod or haddock) - 300 grams
- All-purpose flour - 100 grams
- Cornstarch - 50 grams
- Baking powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cold sparkling water - 200 ml
- Vegetable oil (for frying) - 500 ml
- Potatoes - 2 large (about 400 grams)
- Malt vinegar (for serving) - to taste
- Tartar sauce (for serving) - to taste
Steps
- Peel the potatoes and cut them into thick chips (about 1 cm wide). Soak them in cold water for 30 minutes to remove excess starch.
- In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until you achieve a smooth batter.
- Heat the vegetable oil in a deep pot or fryer to 180°C (350°F).
- Drain the soaked chips and pat them dry with a kitchen towel. Fry the chips in the hot oil for about 5-7 minutes until they are golden but not fully cooked. Remove and drain on paper towels.
- Dredge the fish fillets in a little flour to help the batter stick, then dip them into the batter, allowing any excess to drip off.
- Carefully place the battered fish into the hot oil and fry for about 5-6 minutes or until golden brown and cooked through. Remove and drain on paper towels.
- Return the chips to the hot oil and fry for an additional 3-4 minutes until crispy and golden. Drain again.
- Serve the fish and chips hot, drizzled with malt vinegar and accompanied by tartar sauce.
