Ingredients
- Ground halal beef - 250 grams
- Small flour tortillas - 4 pieces
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 200 grams
- Shredded cheese (cheddar or mozzarella) - 100 grams
- Fresh cilantro - 2 tablespoons, chopped
- Sour cream - for serving (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté for about 2-3 minutes until the onion is translucent.
- Add the ground halal beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the cumin, chili powder, salt, and black pepper. Cook for an additional 2 minutes to combine the flavors.
- Remove from heat and stir in half of the tomato sauce and half of the chopped cilantro.
- Take a tortilla and place about 2-3 tablespoons of the beef mixture in the center. Roll it up tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.
- Pour the remaining tomato sauce over the rolled enchiladas, ensuring they are well coated.
- Sprinkle the shredded cheese evenly over the top of the enchiladas.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before serving. Garnish with the remaining cilantro and serve with sour cream if desired.
