Ingredients

  • Ground halal beef - 250 grams
  • Medium onion, diced - 1
  • Garlic cloves, minced - 2
  • Red bell pepper, diced - 1
  • Canned black beans, drained and rinsed - 150 grams
  • Corn kernels, frozen or fresh - 100 grams
  • Tortillas (flour or corn) - 4
  • Shredded cheddar cheese - 150 grams
  • Enchilada sauce - 200 ml
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro, chopped (for garnish) - optional

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the ground halal beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the diced red bell pepper, black beans, corn, cumin, chili powder, salt, and black pepper. Cook for an additional 3-4 minutes until the vegetables are tender.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Take a tortilla and fill it with the beef mixture, rolling it up tightly. Place the rolled tortilla seam-side down in the baking dish. Repeat with the remaining tortillas.
  7. Pour the remaining enchilada sauce evenly over the top of the rolled tortillas, then sprinkle the shredded cheddar cheese on top.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven, let it cool for a few minutes, then garnish with fresh cilantro if desired. Serve warm.
