Ingredients
- Ground halal beef - 250 grams
- Medium onion, diced - 1
- Garlic cloves, minced - 2
- Red bell pepper, diced - 1
- Canned black beans, drained and rinsed - 150 grams
- Corn kernels, frozen or fresh - 100 grams
- Tortillas (flour or corn) - 4
- Shredded cheddar cheese - 150 grams
- Enchilada sauce - 200 ml
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro, chopped (for garnish) - optional
Steps
- Preheat your oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
- Add the ground halal beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
- Stir in the diced red bell pepper, black beans, corn, cumin, chili powder, salt, and black pepper. Cook for an additional 3-4 minutes until the vegetables are tender.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Take a tortilla and fill it with the beef mixture, rolling it up tightly. Place the rolled tortilla seam-side down in the baking dish. Repeat with the remaining tortillas.
- Pour the remaining enchilada sauce evenly over the top of the rolled tortillas, then sprinkle the shredded cheddar cheese on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is bubbly and golden.
- Remove from the oven, let it cool for a few minutes, then garnish with fresh cilantro if desired. Serve warm.
