Ingredients

  • Linguine - 200 grams
  • Halal clams (fresh or canned) - 250 grams
  • Garlic (minced) - 3 cloves
  • Olive oil - 2 tablespoons
  • Fresh parsley (chopped) - 2 tablespoons
  • Red pepper flakes - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Grated Parmesan cheese (optional) - 2 tablespoons

Steps

  1. Cook the linguine in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  3. Add the clams to the skillet. If using canned clams, add them with their juice; if using fresh clams, add a splash of water to help them steam open. Cover and cook for about 5-7 minutes until the clams are opened.
  4. Stir in the cooked linguine, reserved pasta water, lemon juice, chopped parsley, salt, and black pepper. Toss everything together gently to combine and heat through for about 2-3 minutes.
