Ingredients
- Linguine - 200 grams
- Halal clams (fresh or canned) - 250 grams
- Garlic (minced) - 3 cloves
- Olive oil - 2 tablespoons
- Fresh parsley (chopped) - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Grated Parmesan cheese (optional) - 2 tablespoons
Steps
- Cook the linguine in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the clams to the skillet. If using canned clams, add them with their juice; if using fresh clams, add a splash of water to help them steam open. Cover and cook for about 5-7 minutes until the clams are opened.
- Stir in the cooked linguine, reserved pasta water, lemon juice, chopped parsley, salt, and black pepper. Toss everything together gently to combine and heat through for about 2-3 minutes.
- Serve immediately, garnished with additional parsley and grated Parmesan cheese if desired.
