Ingredients

  • Canned clams (drained) - 200 grams
  • Potatoes (diced) - 150 grams
  • Onion (finely chopped) - 50 grams
  • Celery (finely chopped) - 50 grams
  • Garlic (minced) - 2 cloves
  • Halal chicken or vegetable broth - 250 ml
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • All-purpose flour - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Breadcrumbs - 50 grams
  • Parsley (chopped) - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pot, heat the olive oil over medium heat. Add the chopped onion and celery, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced potatoes and pour in the Halal broth. Bring to a simmer and cook for 10 minutes, until the potatoes are tender.
  5. Sprinkle the flour over the mixture, stirring well to combine and thicken the chowder. Cook for 2-3 minutes.
  6. Pour in the heavy cream, and add the drained clams, dried thyme, black pepper, and salt. Stir well and let it simmer for another 5 minutes.
  7. Transfer the chowder mixture into a baking dish and smooth the top.
  8. In a small bowl, combine the breadcrumbs and chopped parsley. Sprinkle this mixture evenly over the chowder.
  9. Bake in the preheated oven for 20 minutes, or until the top is golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
