- Potatoes (diced) - 150 grams

- Celery (finely chopped) - 50 grams

- Halal chicken or vegetable broth - 250 ml
- Heavy cream - 100 ml
- Olive oil - 1 tablespoon
- All-purpose flour - 2 tablespoons
- Dried thyme - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Breadcrumbs - 50 grams
- Parsley (chopped) - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a pot, heat the olive oil over medium heat. Add the chopped onion and celery, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced potatoes and pour in the Halal broth. Bring to a simmer and cook for 10 minutes, until the potatoes are tender.
- Sprinkle the flour over the mixture, stirring well to combine and thicken the chowder. Cook for 2-3 minutes.
- Pour in the heavy cream, and add the drained clams, dried thyme, black pepper, and salt. Stir well and let it simmer for another 5 minutes.
- Transfer the chowder mixture into a baking dish and smooth the top.
- In a small bowl, combine the breadcrumbs and chopped parsley. Sprinkle this mixture evenly over the chowder.
- Bake in the preheated oven for 20 minutes, or until the top is golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
