  • fresh halal clams - 250 grams
  • potatoes (diced) - 150 grams

  • celery (diced) - 1 stalk
  • carrot (diced) - 1 medium
  • garlic (minced) - 2 cloves
  • olive oil - 2 tablespoons
  • chicken broth (halal) - 500 ml
  • heavy cream - 100 ml
  • bay leaf - 1
  • thyme (dried) - 1 teaspoon
  • black pepper - to taste
  • salt - to taste
  • fresh parsley (chopped) - for garnish

Steps

  1. Rinse the fresh clams under cold water to remove any grit and sand.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion, celery, and carrot, and sauté until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic and thyme, stirring for another minute until fragrant.
  4. Stir in the diced potatoes, chicken broth, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes or until the potatoes are tender.
