Ingredients
- 2 large corn tortillas
- 300 grams Halal chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- Black pepper to taste
- 1/2 cup black beans, rinsed and drained
- 1/2 cup cherry tomatoes, halved
- 1/2 avocado, diced
- 1/4 cup red onion, diced
- 1/2 cup shredded lettuce
- 1/4 cup sour cream
- 1 lime, cut into wedges
- Fresh cilantro for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Brush both sides of the corn tortillas with a little olive oil and place them on a baking sheet. Bake for 10-12 minutes or until crispy and golden.
- While the tortillas are baking, heat a skillet over medium heat and add olive oil.
- Add the diced Halal chicken to the skillet and season with cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Cook for 8-10 minutes until the chicken is cooked through and no longer pink.
- Once the chicken is cooked, remove it from heat and set aside.
- In a bowl, combine the black beans, cherry tomatoes, red onion, and avocado. Season with a pinch of salt and mix gently.
- Once the tortillas are ready, remove them from the oven and let them cool slightly.
- To assemble, place a layer of shredded lettuce on each tostada, followed by a generous scoop of the chicken mixture and then the bean and vegetable mix.
- Top with a dollop of sour cream and garnish with fresh cilantro.
- Serve with lime wedges on the side for squeezing over the tostadas.
