Steps
- In a large bowl, combine the Greek yogurt, lemon juice, minced garlic, grated ginger, garam masala, cumin powder, paprika, turmeric, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, ideally 2-4 hours for maximum flavor.
- Preheat your grill or oven to 200°C (400°F). If using an oven, place a wire rack on a baking sheet.
- Remove the chicken from the marinade, allowing the excess to drip off. Brush the chicken with vegetable oil.
- Place the chicken on the grill or on the wire rack if using an oven. Grill for about 25-30 minutes, turning halfway through, until the chicken is cooked through and has a nice char.
