- Chicken breast - 300 grams
- Yogurt - 2 tablespoons
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground paprika - 1 teaspoon
- Ground turmeric - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Basmati rice - 1 cup
- Water - 2 cups
- Cucumber - 1, diced
- Tomato - 1, diced
- Red onion - 1/2, thinly sliced
- Parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Lemon juice - 1 tablespoon
- Pita bread - 2 pieces, optional
Steps
- In a bowl, combine yogurt, olive oil, minced garlic, cumin, coriander, paprika, turmeric, salt, and black pepper. Add the chicken breast and coat well. Marinate for at least 30 minutes, or overnight in the refrigerator for best results.
- While the chicken is marinating, rinse the basmati rice under cold water until the water runs clear. In a saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt, reduce heat to low, cover, and cook for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.
- Preheat a grill pan or skillet over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F). Remove from heat and let it rest for a few minutes before slicing.
- In a small bowl, mix tahini with lemon juice and a little water until smooth and drizzling consistency is achieved. Adjust with more water if needed.
- To assemble the bowls, place a serving of rice at the bottom, add sliced chicken on top, and then layer with diced cucumber, tomato, red onion, and parsley. Drizzle with tahini sauce and serve with pita bread on the side if desired.
