Steps
- In a bowl, combine minced garlic, ground cumin, ground coriander, paprika, ground turmeric, cinnamon, salt, black pepper, olive oil, and lemon juice to make the marinade.
- Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.
- Preheat a grill or a skillet over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes per side or until fully cooked and slightly charred.
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
- In a small bowl, mix tahini with water to create a smooth sauce. Adjust the consistency with more water if necessary.
- Warm the pita bread on the grill for about 1 minute on each side.
- Assemble the shawarma by placing sliced chicken on the pita bread, then top with cucumber, tomato, red onion, parsley, and drizzle with tahini sauce.
- Fold the pita to enclose the filling and serve immediately.
