  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Pita bread - 2 pieces
  • Cucumber - 1/2, sliced
  • Tomato - 1, diced
  • Red onion - 1/4, thinly sliced
  • Parsley - 1/4 cup, chopped
  • Tahini - 2 tablespoons
  • Water - 2 tablespoons

Steps

  1. In a bowl, combine minced garlic, ground cumin, ground coriander, paprika, ground turmeric, cinnamon, salt, black pepper, olive oil, and lemon juice to make the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat a grill or a skillet over medium-high heat. Remove the chicken from the marinade and grill for about 5-7 minutes per side or until fully cooked and slightly charred.
  4. Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  5. In a small bowl, mix tahini with water to create a smooth sauce. Adjust the consistency with more water if necessary.
  6. Warm the pita bread on the grill for about 1 minute on each side.
  7. Assemble the shawarma by placing sliced chicken on the pita bread, then top with cucumber, tomato, red onion, parsley, and drizzle with tahini sauce.
