- Brown sugar - 1 tablespoon
- Peanut butter - 3 tablespoons
- Coconut milk - 1/4 cup
- Chili sauce - 1 tablespoon
- Salt - to taste
- Skewers - 4-6 (wooden or metal)
Steps
- Cut the chicken breast into bite-sized pieces and place them in a bowl.
- In a separate bowl, mix together the soy sauce, lime juice, minced garlic, grated ginger, cumin, coriander, turmeric, cayenne pepper, and brown sugar to create a marinade.
- Pour the marinade over the chicken, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes.
- While the chicken is marinating, soak wooden skewers in water for 10 minutes to prevent burning (if using metal skewers, skip this step).
- After marinating, thread the chicken pieces onto the skewers.
- Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
- In a small saucepan, combine the peanut butter, coconut milk, chili sauce, and a pinch of salt over low heat. Stir until smooth and heated through, then remove from heat.
- Serve the chicken satay skewers with the warm peanut sauce drizzled on top or on the side for dipping.
