Ingredients

  • Chicken breast - 300 grams
  • Soy sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Brown sugar - 1 tablespoon
  • Peanut butter - 3 tablespoons
  • Coconut milk - 1/4 cup
  • Chili sauce - 1 tablespoon
  • Salt - to taste
  • Skewers - 4-6 (wooden or metal)

Steps

  1. Cut the chicken breast into bite-sized pieces and place them in a bowl.
  2. In a separate bowl, mix together the soy sauce, lime juice, minced garlic, grated ginger, cumin, coriander, turmeric, cayenne pepper, and brown sugar to create a marinade.
  3. Pour the marinade over the chicken, ensuring all pieces are well coated. Cover and refrigerate for at least 15 minutes.
  4. While the chicken is marinating, soak wooden skewers in water for 10 minutes to prevent burning (if using metal skewers, skip this step).
  5. After marinating, thread the chicken pieces onto the skewers.
  6. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  7. In a small saucepan, combine the peanut butter, coconut milk, chili sauce, and a pinch of salt over low heat. Stir until smooth and heated through, then remove from heat.
  8. Serve the chicken satay skewers with the warm peanut sauce drizzled on top or on the side for dipping.
