Ingredients

  • Halal chicken breast - 200 grams
  • Olive oil - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bell pepper (sliced) - 1 medium
  • Onion (sliced) - 1 medium
  • Cheddar cheese (shredded) - 1 cup
  • Flour tortillas - 2 large
  • Fresh cilantro (chopped) - 2 tablespoons
  • Sour cream (for serving) - 2 tablespoons
  • Salsa (for serving) - 2 tablespoons

Steps

  1. Heat the olive oil in a skillet over medium heat.
  2. Season the chicken breast with cumin, paprika, garlic powder, salt, and pepper.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove and let it rest for a few minutes before slicing.
  4. In the same skillet, add the sliced bell pepper and onion. Sauté for about 5 minutes until softened.
  5. Layer half of the cheddar cheese on one half of each tortilla. Add the sautéed vegetables, sliced chicken, and chopped cilantro on top.
  6. Sprinkle the remaining cheese over the chicken and fold the tortillas in half.
  7. Wipe the skillet clean, then place the quesadillas in the skillet over medium heat. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
  8. Slice the quesadillas into wedges and serve with sour cream and salsa.
