- Black pepper - 1/4 teaspoon
- Bell pepper (sliced) - 1 medium
- Onion (sliced) - 1 medium
- Cheddar cheese (shredded) - 1 cup
- Flour tortillas - 2 large
- Fresh cilantro (chopped) - 2 tablespoons
- Sour cream (for serving) - 2 tablespoons
- Salsa (for serving) - 2 tablespoons
Steps
- Heat the olive oil in a skillet over medium heat.
- Season the chicken breast with cumin, paprika, garlic powder, salt, and pepper.
- Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove and let it rest for a few minutes before slicing.
- In the same skillet, add the sliced bell pepper and onion. Sauté for about 5 minutes until softened.
- Layer half of the cheddar cheese on one half of each tortilla. Add the sautéed vegetables, sliced chicken, and chopped cilantro on top.
- Sprinkle the remaining cheese over the chicken and fold the tortillas in half.
- Wipe the skillet clean, then place the quesadillas in the skillet over medium heat. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
- Slice the quesadillas into wedges and serve with sour cream and salsa.
