  • Bay leaves - 1
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the vegetable oil over medium heat. Add the flour, stirring constantly, to make a roux until it turns a deep brown color (about 10 minutes).
  2. Add the diced onion, green bell pepper, and celery to the pot, cooking for about 5 minutes until softened.
