- Cooked jasmine rice - 2 cups (about 300 grams)
- Carrot - 1 medium, diced
- Green peas - 1/2 cup (75 grams)
- Eggs - 2 large, beaten
- Soy sauce (low sodium) - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Vegetable oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the diced chicken breast to the skillet and season with salt and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and diced carrot, sautéing for about 2 minutes until fragrant.
- Add the green peas and cooked jasmine rice to the skillet, stirring to combine. Cook for an additional 3-4 minutes, allowing the rice to heat through.
- Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them into the rice mixture.
- Return the cooked chicken to the skillet, add soy sauce, and mix everything together until well combined and heated through.
- Stir in the chopped green onions and cook for another minute. Adjust seasoning if needed, then serve immediately.
