Ingredients

  • Halal chicken breast - 300 grams
  • Flour tortillas - 4 medium
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Shredded cheese (Mexican blend) - 100 grams
  • Enchilada sauce - 1 cup
  • Sour cream - for serving (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until soft, about 5 minutes.
  3. Add minced garlic, cumin, chili powder, salt, and black pepper to the skillet, stirring for another minute until fragrant.
  4. In a separate pot, cook the Halal chicken breast in boiling water for about 15 minutes or until fully cooked. Let it cool, then shred the chicken.
  5. Combine the shredded chicken with the sautéed mixture and chopped cilantro in a bowl. Mix well.
  6. Lay out a tortilla and place about 1/4 of the chicken mixture in the center. Sprinkle with shredded cheese, then roll it up tightly. Repeat with the remaining tortillas.
  7. Place the rolled enchiladas seam-side down in a baking dish. Pour the enchilada sauce over the top, then sprinkle with any remaining cheese.
  8. Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and slightly golden.
  9. Serve hot, garnished with additional cilantro and a dollop of sour cream if desired.
