- Halal chicken breast - 300 grams
- Flour tortillas - 4 medium
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Shredded cheese (Mexican blend) - 100 grams
- Enchilada sauce - 1 cup
- Sour cream - for serving (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until soft, about 5 minutes.
- Add minced garlic, cumin, chili powder, salt, and black pepper to the skillet, stirring for another minute until fragrant.
- In a separate pot, cook the Halal chicken breast in boiling water for about 15 minutes or until fully cooked. Let it cool, then shred the chicken.
- Combine the shredded chicken with the sautéed mixture and chopped cilantro in a bowl. Mix well.
- Lay out a tortilla and place about 1/4 of the chicken mixture in the center. Sprinkle with shredded cheese, then roll it up tightly. Repeat with the remaining tortillas.
- Place the rolled enchiladas seam-side down in a baking dish. Pour the enchilada sauce over the top, then sprinkle with any remaining cheese.
- Cover with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is bubbly and slightly golden.
- Serve hot, garnished with additional cilantro and a dollop of sour cream if desired.
