  • Tortillas (large) - 2 pieces
  • Rice (cooked) - 1 cup
  • Black beans (cooked) - 1/2 cup
  • Avocado - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Lettuce - 1 cup, shredded
  • Cheddar cheese - 1/2 cup, shredded
  • Sour cream - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a bowl, mix olive oil, garlic powder, cumin, paprika, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into bite-sized pieces and add it to the marinade, tossing to coat. Let it marinate for 15 minutes.
  3. In a skillet over medium heat, cook the marinated chicken for about 8-10 minutes until fully cooked, stirring occasionally.
  4. While the chicken is cooking, prepare the burrito fillings: warm the tortillas, and cook the rice if not pre-cooked.
  5. Lay a tortilla flat and layer with 1/2 cup of cooked rice, 1/4 cup of black beans, cooked chicken, avocado slices, diced tomato, shredded lettuce, and shredded cheese.
  6. Drizzle with sour cream and sprinkle with chopped cilantro.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top to form a burrito.
