Ingredients

  • Basmati rice - 200 grams
  • Chicken breast, boneless and skinless - 300 grams
  • Onion, thinly sliced - 1 medium
  • Tomato, chopped - 1 medium
  • Plain yogurt - 100 grams
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon (adjust to taste)
  • Cilantro, chopped - 2 tablespoons
  • Mint leaves, chopped - 2 tablespoons
  • Cooking oil (vegetable or olive) - 3 tablespoons
  • Salt - to taste
  • Water - 500 ml

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a bowl, combine the chicken with yogurt, garlic, ginger, garam masala, cumin, turmeric, coriander, red chili powder, and salt. Marinate for at least 15 minutes.
  3. In a pot, heat the cooking oil over medium heat, add the sliced onions, and sauté until golden brown.
  4. Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 10-12 minutes.
  5. Stir in the chopped tomatoes, cooking until they soften, about 3-5 minutes.
  6. Drain the soaked rice and add it to the pot with the chicken mixture, followed by 500 ml of water.
  7. Bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.
  8. Remove from heat and let it sit covered for another 10 minutes.
  9. Fluff the biryani with a fork, then garnish with chopped cilantro and mint before serving.
