  • Vegetable oil - 1 tablespoon
  • Baguette - 1 large (or 2 small)
  • Cucumber - 1 small, sliced
  • Carrot - 1 medium, julienned
  • Daikon radish - 50 grams, julienned
  • Fresh cilantro - 1/4 cup, chopped
  • Sriracha - to taste
  • Mayonnaise - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, mix the soy sauce, rice vinegar, brown sugar, minced garlic, grated ginger, salt, and pepper to create a marinade.
  2. Slice the chicken breast into thin strips and add them to the marinade. Let it marinate for at least 15 minutes.
  3. Heat the vegetable oil in a skillet over medium-high heat. Add the marinated chicken and cook for 7-10 minutes, or until fully cooked and slightly caramelized.
  4. While the chicken is cooking, prepare the pickled vegetables by combining the julienned carrot and daikon radish in a bowl. Add a pinch of salt and let it sit for about 5 minutes.
