- chicken breast - 300 grams
- zucchini - 2 medium
- olive oil - 2 tablespoons
- garlic - 3 cloves, minced
- cherry tomatoes - 200 grams, halved
- fresh basil - 1/4 cup, chopped
- parmesan cheese - 30 grams, grated
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon
- lemon juice - 1 tablespoon
Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles and set aside.
- Cut the chicken breast into bite-sized pieces and season with salt and black pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and cook for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant.
- Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Return the cooked chicken to the skillet and add the zucchini noodles. Toss everything together and cook for an additional 3-4 minutes until the zucchini is just tender.
- Remove from heat and stir in the fresh basil and lemon juice.
- Serve hot, topped with grated parmesan cheese.
