- boneless, skinless chicken breast - 300 grams
- bell pepper (any color) - 1 medium, sliced
- broccoli florets - 100 grams
- carrot - 1 medium, julienned
- onion - 1 medium, sliced
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, grated
- soy sauce (halal) - 3 tablespoons
- sesame oil - 1 tablespoon
- olive oil - 1 tablespoon
- black pepper - 1/2 teaspoon
- salt - to taste
- spring onions - 2, chopped, for garnish
- sesame seeds - 1 tablespoon, for garnish
Steps
- 1. Cut the chicken breast into bite-sized pieces and season with black pepper and a pinch of salt.
- 2. Heat olive oil in a large skillet or wok over medium-high heat.
- 3. Add the chicken pieces to the skillet and stir-fry for about 5-7 minutes until they are cooked through and golden brown. Remove the chicken from the skillet and set aside.
- 4. In the same skillet, add the sesame oil, garlic, and ginger, and sauté for 1 minute until fragrant.
- 5. Add the sliced onion, bell pepper, carrot, and broccoli florets to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp.
- 6. Return the cooked chicken to the skillet and pour the soy sauce over the mixture. Stir well to combine and heat through for another 2-3 minutes.
- 7. Taste and adjust seasoning if necessary. Remove from heat.
- 8. Serve hot, garnished with spring onions and sesame seeds.
