Ingredients

  • Chicken breast, diced - 200 grams
  • Arborio rice - 150 grams
  • Chicken broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Bell pepper, diced - 1 medium
  • Green peas - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a saucepan, heat the chicken broth over medium heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  4. Add the diced carrot and bell pepper to the skillet and cook for another 3-4 minutes until slightly softened.
  5. Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to absorb the flavors.
  6. Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
  7. In the last 5 minutes of cooking, add the green peas and cooked chicken back into the skillet. Stir to combine.
  8. Once the risotto is cooked, remove from heat and stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
  9. Serve hot, garnished with additional parsley and Parmesan if desired.
