- Chicken breast, diced - 200 grams
- Arborio rice - 150 grams
- Chicken broth - 500 milliliters
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Bell pepper, diced - 1 medium
- Green peas - 100 grams
- Parmesan cheese, grated - 50 grams
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
Steps
- In a saucepan, heat the chicken broth over medium heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrot and bell pepper to the skillet and cook for another 3-4 minutes until slightly softened.
- Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to absorb the flavors.
- Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding more broth. Continue this process for about 18-20 minutes, or until the rice is creamy and al dente.
- In the last 5 minutes of cooking, add the green peas and cooked chicken back into the skillet. Stir to combine.
- Once the risotto is cooked, remove from heat and stir in the grated Parmesan cheese, chopped parsley, and season with salt and black pepper to taste.
- Serve hot, garnished with additional parsley and Parmesan if desired.
