  • boneless, skinless chicken breasts - 300 grams
  • olive oil - 2 tablespoons
  • onion, chopped - 1 medium (150 grams)
  • garlic, minced - 2 cloves
  • carrot, sliced - 1 medium (70 grams)
  • bell pepper, diced - 1 medium (150 grams)
  • zucchini, sliced - 1 medium (150 grams)
  • broccoli florets - 100 grams
  • cream of mushroom soup - 1 cup (240 ml)
  • chicken broth - 1/2 cup (120 ml)
  • mixed herbs (oregano, thyme, basil) - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • cheddar cheese, shredded - 1/2 cup (60 grams)
  • bread crumbs - 1/4 cup (30 grams)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for about 2-3 minutes until softened.
  3. Add the sliced chicken breasts to the skillet, cooking until they are browned on all sides, about 5-7 minutes.
  4. Stir in the sliced carrot, diced bell pepper, sliced zucchini, and broccoli florets. Cook for another 5 minutes until the vegetables begin to soften.
  5. Pour in the cream of mushroom soup and chicken broth, mixing well to combine. Add the mixed herbs, salt, and black pepper.
