  • Red onion, chopped - 1 small
  • Cherry tomatoes, halved - 150 grams
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, salt, black pepper, and lemon juice.
  3. Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let them marinate for about 10 minutes.
