Ingredients

  • Chicken breast - 300 grams
  • Sweet potatoes - 2 medium (about 400 grams)
  • Olive oil - 3 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons (chopped, for garnish)
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Peel and cut the sweet potatoes into fries, about 1 cm thick, and place them in a large bowl.
  3. Drizzle 2 tablespoons of olive oil over the sweet potatoes and sprinkle with garlic powder, paprika, salt, and pepper. Toss until evenly coated.
  4. Spread the sweet potato fries on a baking sheet lined with parchment paper in a single layer. Bake for 25-30 minutes, flipping halfway through, until they're golden and crispy.
  5. While the fries are baking, prepare the chicken. In a medium bowl, combine the chicken breast, remaining olive oil, cumin, salt, black pepper, and lemon juice. Mix well and let it marinate for about 10-15 minutes.
  6. Heat a skillet over medium heat. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  7. Once the chicken is done, remove from heat and let it rest for a few minutes before slicing.
  8. Serve the sliced chicken alongside the sweet potato fries, garnished with chopped fresh parsley.
