Ingredients

  • Chicken breast - 300 grams
  • Sweet potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the sweet potatoes into 1-inch cubes, then place them in a mixing bowl.
  3. Add 1 tablespoon of olive oil, half of the minced garlic, paprika, cumin, salt, and black pepper to the sweet potatoes. Toss until well coated.
  4. Spread the sweet potatoes on a baking sheet in a single layer and bake for 25 minutes.
  5. While the sweet potatoes are baking, cut the chicken breast into bite-sized pieces.
  6. In a bowl, combine the chicken pieces with the remaining olive oil, garlic, honey, salt, and pepper. Mix well to coat the chicken.
  7. After the sweet potatoes have baked for 25 minutes, remove the baking sheet from the oven and push the sweet potatoes to one side.
  8. Add the seasoned chicken to the other side of the baking sheet and return it to the oven for an additional 15-20 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  9. Once cooked, remove from the oven and let it cool for a few minutes.
  10. Serve the chicken and sweet potatoes in bowls, garnished with chopped fresh parsley.
