Ingredients

  • Boneless, skinless chicken thighs - 300 grams
  • Yellow squash - 200 grams
  • Red bell pepper - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine olive oil, minced garlic, ground cumin, paprika, salt, and black pepper.
  3. Add the chicken thighs to the bowl and coat them well with the spice mixture. Let them marinate for 10 minutes.
