- Carrot - 1 medium, julienned
- Broccoli florets - 1 cup (about 150 grams)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce (low sodium) - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground black pepper - 1/2 teaspoon
- Salt - to taste
- Green onions - 2, sliced (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Cut the chicken breast into bite-sized pieces and season with salt, black pepper, and lemon juice. Let it marinate for about 10 minutes.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until cooked through and golden brown.
- Remove the chicken from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.

- Return the cooked chicken to the skillet, then add the cooked basmati rice and soy sauce. Stir everything together until well combined and heated through, about 3-4 minutes.
