  • Cooked basmati rice - 1 cup (200 grams)
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Broccoli florets - 1 cup (about 150 grams)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce (low sodium) - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground black pepper - 1/2 teaspoon
  • Salt - to taste
  • Green onions - 2, sliced (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Cut the chicken breast into bite-sized pieces and season with salt, black pepper, and lemon juice. Let it marinate for about 10 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes, or until cooked through and golden brown.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.
  4. Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.
  5. Add the sliced bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for about 5 minutes until the vegetables are tender but still crisp.
  6. Return the cooked chicken to the skillet, then add the cooked basmati rice and soy sauce. Stir everything together until well combined and heated through, about 3-4 minutes.
  7. Taste and adjust seasoning with additional salt and pepper if necessary.
  8. Serve hot, garnished with sliced green onions and sesame seeds.
