Ingredients

  • Boneless, skinless chicken thighs - 300 grams
  • Basmati rice - 150 grams
  • Cucumber - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Red onion - 1 small, thinly sliced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 400 milliliters

Steps

  1. In a bowl, mix olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create a marinade.
  2. Add the chicken thighs to the marinade, cover, and let them marinate for at least 15 minutes.
  3. While the chicken is marinating, rinse the basmati rice under cold water until the water runs clear.
  4. In a saucepan, bring 400 milliliters of water to a boil, add the rice, cover, and reduce to a simmer for about 15 minutes or until the rice is cooked and water is absorbed.
  5. In a skillet, heat a little oil over medium heat and cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
  6. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  7. In a large bowl, combine the cooked rice, diced cucumber, halved cherry tomatoes, sliced red onion, and chopped parsley.
  8. Add the sliced chicken on top of the salad, drizzle with any remaining marinade, and toss gently to combine.
  9. Serve warm or at room temperature.
