- Basmati rice - 150 grams

- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, thinly sliced
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 400 milliliters
Steps
- In a bowl, mix olive oil, lemon juice, minced garlic, ground cumin, paprika, salt, and black pepper to create a marinade.
- Add the chicken thighs to the marinade, cover, and let them marinate for at least 15 minutes.
- While the chicken is marinating, rinse the basmati rice under cold water until the water runs clear.
- In a saucepan, bring 400 milliliters of water to a boil, add the rice, cover, and reduce to a simmer for about 15 minutes or until the rice is cooked and water is absorbed.
- In a skillet, heat a little oil over medium heat and cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and golden brown.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
- In a large bowl, combine the cooked rice, diced cucumber, halved cherry tomatoes, sliced red onion, and chopped parsley.
- Add the sliced chicken on top of the salad, drizzle with any remaining marinade, and toss gently to combine.
- Serve warm or at room temperature.
