  • Basmati rice - 1 cup
  • Chicken breast (halal) - 300 grams, diced
  • Chicken broth - 2 cups
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Green peas - 1/2 cup, frozen
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot, and cook for another 2 minutes until fragrant.
  4. Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
  5. Add the cumin, coriander, turmeric, cinnamon, salt, and black pepper, stirring to coat the chicken and vegetables evenly.
  6. Drain the soaked rice and add it to the pot, stirring to mix with the chicken and spices.
  7. Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  8. After 15 minutes, add the frozen green peas, recover the pot, and cook for an additional 5 minutes.
  9. Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh parsley and serve hot.
