- Chicken broth - 2 cups

- Carrot - 1 small, diced
- Green peas - 1/2 cup, frozen
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon

Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced carrot, and cook for another 2 minutes until fragrant.
- Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Add the cumin, coriander, turmeric, cinnamon, salt, and black pepper, stirring to coat the chicken and vegetables evenly.
- Drain the soaked rice and add it to the pot, stirring to mix with the chicken and spices.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, add the frozen green peas, recover the pot, and cook for an additional 5 minutes.
- Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve hot.
