  • chicken broth - 2 cups (500 ml)
  • olive oil - 1 tablespoon (15 ml)
  • onion - 1 medium, diced
  • garlic - 2 cloves, minced
  • carrot - 1 medium, diced
  • green bell pepper - 1 medium, diced
  • frozen peas - 1/2 cup (75 grams)
  • heavy cream - 1/2 cup (120 ml)
  • salt - 1 teaspoon (5 grams)
  • black pepper - 1/2 teaspoon (2 grams)
  • paprika - 1 teaspoon (2 grams)
  • cumin - 1/2 teaspoon (1 gram)
  • parsley - 2 tablespoons, chopped (optional for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the diced carrot and green bell pepper to the skillet, cooking for an additional 5 minutes until softened.
  4. Cut the chicken breasts into bite-sized pieces, season with salt, black pepper, paprika, and cumin. Add the chicken to the skillet and cook until browned, about 5-7 minutes.
  5. Stir in the rice, chicken broth, and frozen peas. Bring to a simmer, then remove from heat.
  6. Pour the mixture into a greased 9x9 inch (23x23 cm) baking dish. Drizzle the heavy cream on top and gently stir to combine.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, until the rice is tender and the liquid is absorbed.
