Ingredients

  • Chicken breast - 300 grams
  • Basmati rice - 150 grams

  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Cucumber - 1/2, diced
  • Tomato - 1 medium, diced
  • Red onion - 1/4 small, finely chopped
  • Plain yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine the olive oil, minced garlic, cumin, coriander, paprika, salt, black pepper, and lemon juice. Add the chicken breast and marinate for at least 15 minutes.
  2. While the chicken is marinating, rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using 300 ml of water for 150 grams of rice.
  3. Heat a skillet over medium heat. Once hot, add the marinated chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and let rest for a few minutes before slicing.
