Ingredients

  • Boneless, skinless chicken thighs - 300 grams
  • Basmati rice - 1 cup (200 grams)
  • Chicken broth - 2 cups (480 ml)
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Onion, diced - 1 small (about 100 grams)
  • Bell pepper, diced - 1/2 medium (about 75 grams)
  • Carrot, grated - 1 small (about 50 grams)
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine olive oil, garlic, cumin, coriander, paprika, salt, and black pepper. Add the chicken thighs and marinate for at least 15 minutes.
  3. In a large oven-safe skillet, sauté the onion and bell pepper over medium heat until softened, about 5 minutes.
  4. Add the grated carrot and cook for another 2 minutes. Push the vegetables to the side of the skillet.
  5. Add the marinated chicken to the skillet and sear for 3-4 minutes on each side until browned.
  6. Stir in the rice, making sure it is evenly distributed in the skillet.
  7. Pour in the chicken broth, bring to a simmer, then cover the skillet with a lid or aluminum foil.
  8. Transfer the skillet to the preheated oven and bake for 30 minutes.
  9. Remove from the oven and let it rest for 5 minutes. Fluff the rice with a fork and garnish with chopped parsley before serving.
